Not everyone receives coaching and criticism the same way. You do not want make one or many of your people angry that serve the customer because you do not understand how they are coached.

What helps many managers or companies is having the goals and expectation written out and displayed for all to see. That can be displayed on an individuals computer, within a particular document on the computer, or on the wall in the employee break room. With having the goals and expectations explained and displayed, the people have no reason not to perform.
